Chocolate mousse recipe #2

Serves 6, GF, DF, V
This is such an amazing variation on my usual recipe, so silky smooth and great flavour!
Ingredients:
300g silken tofu
400ml good quality coconut cream (just the solid cream, not the liquid, if any, in the can)
4 Tbsp cocoa powder
4 Tbsp sugar
2 tsp vanilla essence
Method:
Blend all together then pour into serving dishes and allow to set in the fridge for a few hours. Feeling festive? Swap the vanilla for a splash of your favourite flavoured liqueur! (I'm thinking of trying Frangelico next time) or peppermint flavouring.
