Quinoa Breakfast Bake

Serves 4-6
Ingredients:
2 large bananas
1 cup quinoa, washed under cold water and drained.
2 tbsp chia seeds
2 cups plant based milk
2 tsp cinnamon
2 tsp vanilla
3 tbsp maple syrup
1.5 cups chopped apple or frozen berries
Method:
Heat oven to 160 degrees Celcius
Mash bananas and add in all of the other ingredients. Whisk to combine and pour into baking dish.
Bake for approx. 50-60min until quinoa is cooked.
