Chilli lentil soup

Serves 6 GF, DF, V

Ingredients:
1 ½ cups brown lentils
1 Tbsp olive oil
1 onion chopped
3 garlic cloves, crushed
2 tsp ground cumin
2 tsp ground coriander
2 tsp paprika
1/4 tsp chilli powder or fresh/dried sliced chilli to taste
2 red capsicums chopped
2 carrots diced
1 celery stick chopped
4 cups vegetable stock
2 x 400g cans chopped tomatoes
Salt and pepper to taste
Chilli flakes to serve.
Method:
1. Rinse lentils under cold water, removing any dirt.
2. Place oil in frying pan and add garlic and onions, cooking slowly until soft.
3. Add ground spices and chilli and cook until fragrant, about 2 minutes.
4. Add the capsicum, carrots and celery and cook, stirring for 2-3 minutes
5. Add lentils, stock, tomatoes, salt and pepper and cook, covered on a low heat for 45 minutes or until lentils are tender.
6. Serve.
