Choc Tahini Cookies

Ingredients:


100g tahini

50-75g maple syrup

½ tsp vanilla essence

¼ tsp bicarb soda

¼ tsp salt

15g cocoa powder (optional)

100g almond meal (or ground sunflower seeds - see below)

3tbsp sesame seeds


Method:

Mix all ingredients except seeds until it comes together in a smooth dough.

Divide into 16 pieces and shape into balls. Roll each ball in sesame seeds until coated and place on lined baking sheet.

Using the base of a glass, flatten each ball until 7-8mm thick.

Cook in oven at 160deg Celcius (fan forced) for approx. 8 minutes until light golden brown on top.

Leave to cool on baking sheet to harden.


Tip: for a nut free version substitute the almond meal for 100g sunflower seeds, ground to a fine powder in your coffee grinder!
