Lentil bread rolls


Ingredients:

2 cups dry lentils, rinsed and then soaked covered in water for a minimum 3 hrs or overnight, and  then drained

½ cup whole psyllium husks

2 tablespoons oil

½ cup water

¾ tsp salt

1 ¼ tsp baking soda

1 tablespoon apple cider vinegar

Sesame seeds for garnish (optional)

 

Method:

-Preheat oven to 180 deg Celsius

-In food processor blend all ingredients except vinegar until lentils have broken down.  Add vinegar to start bubbling reaction and process quickly until combined.

-Remove dough then divide into 4 parts for larger hamburger buns  or 8 parts for smaller dinner rolls.

-Gently roll each piece and place on non-stick baking sheet, (flatten hamburger buns on tray) and sprinkle sesame seeds over if using.

-Bake for about 20min until golden brown.
