Orange Bread

Ingredients:
¼ cup coconut oil
1 whole orange (that has been boiled for 40min then allowed to cool)
2/3 cup dairy free milk (eg. Almond, soy)
1 tsp vanilla extract
2-4 TBSP maple syrup (optional)
1 ¼ cup almond meal
½ cup sorghum flour
½ cup tapioca flour
¼ cup coconut flour
2 tsp baking powder
Method:
Preheat oven to 160 degrees Celcius (fan forced) and lightly spray a loaf tin with oil.
Chop orange into pieces then blend in food processor until only small pieces of orange rind are visible. Add in all other ingredients and process until combined.
Bake in oven for 55 minutes until inserted skewer comes out clean.
Transfer to wire rack to cool completely before slicing.
Serve with warm berries, coconut yoghurt, sunflower and pumpkin seeds, and chopped pistachios.
TIP: Boil 7-8 oranges at once in a large saucepan - extras can be frozen until next time you need them :)
